Summer is calling, and here’s a fresh and filling salad to keep you fueled all summer long:

Greek Quinoa Salad
This salad brings it's 'A' game as a complete meal - you've got a whole grain, some protein, and of course some yummy veggies! Make this for your next picnic, or pack for lunches this week.
Equipment
- knife
- sauce pan/pot
- serving spoon
Ingredients
- 2 bell peppers (any color) diced (1" pieces)
- 1 Cup cucumber diced (1" pieces)
- 1 Cup baby tomatoes halved
- 1 ½ Cups chickpeas cooked
- ½ Cup feta optional
- 2 Cups qunioa cooked
Dressing
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 2 tsp oregano
- 1 tsp basil
- 1 tsp rosemary
- 1 tsp dill
- salt and pepper to taste
Instructions
- While your quinoa is cooking, dice your vegetables, and cube the feta (if using) into 1/2 " pieces
- Mix up the dressing
- Once the quinoa is cooked, and cooled slightly, add vegetables, chickpeas, feta and dressing, mixing well
- Keep in the fridge until ready to serve.
