Equipment

Ingredients
  

  • 1 Cup chopped red pepper
  • 1 Cup chopped parsley
  • 1 Cup green peas (fresh & cooked, or frozen & thawed)
  • 1 Cup barley (dry)
  • 3 Cups water or broth

Dressing

  • ¼ Cup canola oil
  • ¼ Cup lemon juice
  • 1 Tbsp white sugar
  • 2 Tbsp fresh herbs (oregano, basil, rosemary, etc.)
  • 2 tsp pepper
  • ½ tsp salt

Instructions
 

  • Bring water to a boil, add barley, then simmer until soft (about 30-40 minutes)
  • While Barley is cooking, chop vegetables & mix up the dressing ingredients
  • Add all ingredients together, and mix well
  • Chill in the fridge for at least an hour before serving
