Summer Barley Salad
This is a great way to add barley to your meals, plus the fresh herbs make this dish stand out.
Equipment

- mixing bowl

- measuring cup & spoons
- large spoon
Ingredients
- 1 Cup chopped red pepper
- 1 Cup chopped parsley
- 1 Cup green peas (fresh & cooked, or frozen & thawed)
- 1 Cup barley (dry)
- 3 Cups water or broth
Dressing
- ¼ Cup canola oil
- ¼ Cup lemon juice
- 1 Tbsp white sugar
- 2 Tbsp fresh herbs (oregano, basil, rosemary, etc.)
- 2 tsp pepper
- ½ tsp salt
Instructions
- Bring water to a boil, add barley, then simmer until soft (about 30-40 minutes)
- While Barley is cooking, chop vegetables & mix up the dressing ingredients
- Add all ingredients together, and mix well
- Chill in the fridge for at least an hour before serving
