Greek Quinoa Salad

This salad brings it's 'A' game as a complete meal - you've got a whole grain, some protein, and of course some yummy veggies! Make this for your next picnic, or pack for lunches this week.

Equipment

Ingredients
  

  • 2 bell peppers (any color) diced (1" pieces)
  • 1 Cup cucumber diced (1" pieces)
  • 1 Cup baby tomatoes halved
  • 1 ½ Cups chickpeas cooked
  • ½ Cup feta optional
  • 2 Cups qunioa cooked

Dressing

  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 2 tsp oregano
  • 1 tsp basil
  • 1 tsp rosemary
  • 1 tsp dill
  • salt and pepper to taste

Instructions
 

  • While your quinoa is cooking, dice your vegetables, and cube the feta (if using) into 1/2 " pieces
  • Mix up the dressing
  • Once the quinoa is cooked, and cooled slightly, add vegetables, chickpeas, feta and dressing, mixing well
  • Keep in the fridge until ready to serve.
