Apple Quinoa Breakfast Bites
This is a great option for an on-the-go breakfast that is high in fiber. You can even use left-over cooked quinoa from lunch or supper the day before. Try finding locally produced quinoa (hint: if you're on the Canadian Prairies, there's some produced here!)

Ingredients
- 1 ½ Cups cooked quinoa
- 2 Eggs
- 1 Cup Dried Apple (chopped)
- 1 Cup Walnuts (chopped)
- ¼ Cup Maple Syrup
- 2-3 tsp Cinnamon
Instructions
- Preheat oven to 350 degrees Fahrenheit
- Mix all ingredients into large bowl, stir thoroughly
- Spoon into greased muffin tins, and bake for 20 minutes, or until firm
